Fresh Strawberry Cream Cheese Crepes with Whipped Chocolate Coconut Milk, OH YUM!


What to have for dinner, a question we all wrestle with daily. However, today when I got a call from my son saying he and his dad were going out to BBQ, I decided to try something new. Something I had been thinking about trying for a couple of weeks. Let's just say this was inspired and enjoyable success.  It is also low-carb and gluten free.  Crepes have always been a big deal at our house.  A Christmas Eve morning specialty.  My husband's grandparents taught him to make them and he makes them for our family.  Unfortunately, I have a gluten issue and crepes became a source for actual headaches if I ate them.  I was on a specific diet about a year ago and found a recipe that used ricotta cheese, eggs and chia seeds to make a pancake.  Then I found one similar to this one, however I didn't like the way it tasted so I played with it and altered it to make my own version, which I of course prefer. I hope you enjoy them.

These Cream Cheese Crepes are easy peasy to make.  In a blender add:


  • 4 ounces of cream cheese
  • 4 eggs
  • 1/2 teaspoon vanilla extract
  • 1 packet of  Stevia-check the kind you buy to make sure it doesn't have other additives or other  artificial sweeteners)
Blend until smooth.

Pour some into a small buttered skillet on medium high heat, leaving enough room to turn easily. Cook till golden. You can refrigerate any leftover batter.  Make sure to leave it out for 15 minutes and blend again before using next time.


The Whipped Chocolate Coconut Milk is so easy and yummy you may never go back to Heavy whipping cream again! Seriously, it is delicious and adding chocolate to it makes it like Coconut Chocolate Mousse.  

  1. Take a can of coconut milk and refrigerate it overnight. After trying this I am going to just keep one in the fridge  all the time!
  2. Open the can and the solids have separated from the water.  Scoop out most of the solids and place them in the mixing bowl.  When you get to the water at the bottom of the can pour it out into something else to use in a smoothie later. Then use a spatula to scoop out the remaining solids from the can.
  3. Add a 1/4 teaspoon of vanilla
  4. Add 2 tablespoons Unsweetened Organic Cocoa Powder
  5. Add Stevia to taste 
  6. Use the Whipping attachment and whip till thickened.


Yes, I licked the beater, wouldn't you?


Store in covered container in fridge, it should remain solid. I don't know how long it will be good for but my guess is at least a week. The rule at my house is "When in doubt, throw it out"!

Now, slice up some fresh yummy strawberries and assemble.  Crepes, Strawberries, then a bit of the Topping and Enjoy!
