Poblano Chicken Chowder - One Pot Meal

Spicy Creamy and Wonderful, you'll want seconds of this Poblano Chicken Chowder!

This is such a filling and wonderful meal.  It can be made with corn starch to make it Gluten Free and you don't lose any flavor at all.  
The cilantro is a wow factor in this chowder.  It really brings it all together.  
The recipe makes a mild heat version.  However, I always leave the Frank's Red Hot Sauce out on the table for those, my husband, who want to kick it up a notch or ten.
It goes great with the low-carb Garlic Cheese Biscuits or just toss some tortilla chip strips on top. Either way is yummy!
My grandkids love this one too, and they aren't so easy to please.

Salsa Salad-Great for a BBQ



The fresher and riper the ingredients the better the flavor!  Since the peppers, tomatoes, cilantro and corn are in season, it is the perfect time of year for this Salsa Salad.

This is a crowd pleaser and disappears from the serving bowl quickly.    I prefer serving it with blue corn chips.  I really like their flavor.  With all things add more or less salt/pepper/garlic and lime juice to your taste preferences.  This is a really good starting point but I have had to add more or less based on the ripeness and flavor of all the other ingredients.

This is a family favorite, except for my husband who hates corn in anything.  So, I sometimes just omit the corn ingredient.

It is best to let this salad sit in the refrigerator for an hour before serving to let all the flavors bloom together.  Enjoy the Yum!



Salsa Salad Recipe
In a bowl mix the following:

1 Can Black Beans, drained
1 Cup of Fresh or Frozen Corn
1/2 Bunch of Cilantro, chopped
4 Roma Tomatoes, Seeded and Diced
4 Green Onions, Diced
1 Med/Lg Jalapeno Minced
2 Limes, Juiced
1 Teaspoon Salt
1/2 Teaspoon Black Pepper
2 cloves of garlic minced
1 Avocado, Diced

Serve with Tortilla Chips, if desired.

Nailed Lemon Bars - Low Carb and Delicious!




 My husband loves lemon bars.  He likes them to have a lot of pucker. So being on Low-Carb diet makes it a little difficult to satisfy that sweet tooth. It usually takes quit a bit of sugar to take the extreme sour out of lemons. This recipe does the trick nicely.

If you love lemon flavored treats than you should try this one out.

I did make one variation to the recipe, I only used Stevia sweetener.  The powdered version for sprinkling on top.

It's good to note that this recipe is also Gluten Free, BONUS for Me!

Make sure to refrigerate at least two hours before serving, They don't taste as good if you skip this step and the texture isn't quite right.

I actually prefer them to the original high carb, gluten filled version.
